Spaghetti Sauce (adapted from Whole Food Recipes for Better Living- Vitamix recipe book)
- 3 cups quartered tomatoes (I used Roma)
- 1/2 medium onion
- 1 clove garlic
- 1 tsp dried parsley flakes
- 1 tsp dried crushed oregano
- 1/2 tsp dried crushed basil
- 1/4 tsp black pepper
- salt, to taste
- 1/2 tsp honey or sugar (I used honey)
Add tomatoes to Vitamix. Select variable, speed 1. Turn on and quickly increase to speed 10, then flip to high. Process about 30 seconds. Add remaining ingredients to blender. Select variable, speed 1. Turn on and quickly increase to speed 6. Process 5-6 seconds. Pour into saucepan. Simmer for 30 minutes. Can, freeze or serve immediately.
Makes approximately 2- 2 1/2 cups
